Tom yam kung with giant shrimps

Ingredients for one person:

- 100 g shrimp;
- 1 grass of water
- 1/2 clove of garlic;
- 2 leaves of makrut or the zest of a small lime;
- 1 thin slice of galanga (fresh or dry) (if not 1 piece grated fresh ginger);
- 1 tablespoon of nam pla (or for lack of nioc mam);
- 1 small sprig of lemongrass;
- 1/2 minced shallot;
- 1 prik kino pepper;
- 5 cl of lime juice and / or tamarind powder;
- some branches of coriander.

Preparation

- finely chop the garlic cloves;
- cut the lemongrass sprigs into pieces of one centimeter, mince the shallot and chop coriander;
- pour the water into a saucepan with the shrimps;
- bring to a boil;
- cut the fire;
- remove the shrimp from the pan, remove the head and shell;
- light the fire and put in the pan garlic, shallot, makrut leaves, lemongrass, galangal, bird peppers, nam pla and worm lemon juice;
- cook on low heat for about two minutes;
- add the shrimp to the soup and cook for a minute;
